If you’re looking at the huge bag of chia seeds you’ve just bought but have no idea what to do with them, here is a simple, healthy and delicious blueberry & vanilla chia pudding to help get you on the chia seed band wagon.

Chia seeds have flooded Instagram feeds and food blogs for a while now but the superfood seed’s popularity is still climbing and there’s good reason why.

Chia seeds are rich in protein and omega-3s, as well as a strong source of fibre, antioxidants and non-dairy based calcium. Chia seeds can be added to just about anything from smoothies to sprinkled on salads.

But if you’re after something to satisfy your sweet tooth while remaining healthy, try this easy recipe for a blueberry & vanilla chia pudding. This pudding is filling, perfect for on the go, and a great pre- and post-workout snack.

Makes one serving.

Ingredients:
3 tbsp chia seeds
¾ cup almond milk (or your favourite milk of choice)
1 tsp vanilla extract
½ cup blueberries
1 tbsp maple syrup (optional)

Method:
1. Place the chia seeds, almond milk and vanilla extract in a jar or container and mix the ingredients well.

2. Leave the mixture for 10 minutes, then stir again.

3. Cover and leave the pudding in the fridge overnight preferably, or for at least two hours.

4. For the blueberry topping, muddle the blueberries in a small bowl with the maple syrup using a fork, until a thick puree is formed.

5. Add the blueberry topping to your vanilla chia pudding base, plus any other toppings your heart desires.
