Darling & Co Set To Transform Brisbane’s Social Scene

Lovers of a long lunch will soon have a darling new spot to wile away an afternoon with the launch of Darling & Co.

Darling & Co is set to open their doors on Tuesday, November 3, just in time for Melbourne Cup. Boasting a diverse range of restaurant, bar and function spaces, it’s the ideal location for long lunches, coffee dates or catching up with friends over a rosé, Darling & Co is the sophisticated new venue Brisbane has been missing.

With prime position in the heart of Paddington, Darling & Co will breathe new life into the area. An oasis of sophistication, the freshly remodeled venue oozes charm and appeal with a complete makeover under the direction of well-known architect Angus Munro from Marc & Co, providing the ultimate social destination for residents and visitors to the west side.


At the head of it all sits owner-operator Jacqueline Madden, whose knowledge and passion for sustainable produce and experience in the industry is evident from the curtains to the menus.

The venue’s open plan restaurant and bar seats up to 300 diners, with a mix of individual tables, cosy booths and communal dining available. The menu has been created by Head Chef Guiliano Melluso (formely of Bucci and Michelin Star London hotspot Kitchen WA), whose cooking philosophy is to “let the vibrant flavours of fresh produce take the spotlight.”

An array of local ingredients will shine on the menu, developed by Melluso and Madden, and will incorporate a mix of modern Australian cuisine with a touch of European influence. Darling & Co has joined up with renowned fruit and veg provodore Graham Twine to source the best seasonal produce from surrounding farms between Noosa and Byron Bay.

The simple yet effective lunch & dinner menu is the main focus of the restaurant, featuring dishes ranging from burrata with heirloom tomato to roasted spatchcock with green chilli and preserved lemon. The bar also offers a selection of hand stretched pizzas and other appetising tapas options.

Madden’s vision was to create a space that transitioned seamlessly from breakfast to dinner, with wi-fi, bike racks, plenty of parking, dog bowls and an approachable atmosphere. “When conceptualising what Darling & Co was going to be, we set about sourcing a venue that would provide comfortable all occasion dining, ample parking and an inviting atmosphere which encouraged easy conversation.  There is no reason to leave, it’s all here and it’s so inviting,” she said.

From Monday to Thursday, locals will be able to stop in for takeaway house-blend coffee, cold press juices and an array of breakfast options. Sit down breakfast will be on offer from Friday to Sunday. A full and enticing menu will be showcased including their signature Granola, a tasty Green Breakfast Bowl and a new take on the old faithful, Eggs Benedict.

For those more interested in a tipple, the bar offering boasts an extensive range of boutique Australian and international wines, as well as classic cocktails  carefully crafted by mixologist Zach Miller formerly of X and Y and the Limes Hotel.


The latest venture from the team behind South Brisbane’s Fox Hotel, Darling & Co will transform the inner city’s social scene, offering a spilt level fusion of sustainable dining options, an extensive wine and cocktail list, live music and an electric atmosphere. The venue is sure to be a hit amongst ladies who lunch and anyone seeking a chic function venue for their next event.
