Fig, macadamia & banana porridge

Getting out of bed on a cold morning is difficult to say the least. Not to worry though, this quick and delicious porridge is the perfect excuse to have breakfast in bed, so we can all enjoy that cosiness a little bit longer.

Porridge has a bad reputation for being bland and boring. However, add some fruit, spice and nuts and you’ve got yourself a wintry breakfast dream. This fig, macadamia & banana porridge is full of flavour, completely customisable and will keep you full for hours.

Fig, macadamia & banana porridge

Serves one.

Ingredients
½ cup rolled oats
½ banana mashed
½ cup almond milk
½ cup water
1 tsp vanilla extract

Porridge topping
2 dried figs chopped
½ banana sliced
a sprinkle of cinnamon
a small handful of macadamia nuts
Optional: honey, shredded coconut, cacao nibs, nut butter

Method

1. Combine all the porridge ingredients in a small saucepan and bring to the boil.

2. Reduce heat to low and simmer for about 5 minutes until creamy, making sure to stir often.

3. Transfer the porridge to a bowl and add on all the toppings (plus any more that you desire).

Now all that’s left to do is take your fig, macadamia and banana porridge back to your warm, cosy bed and enjoy.
