Ramen’s origins start with tonkotsu, a pork bone broth that is brewed for up to 24 hours in advance. These days ramen varieties include flavours like shoyu (soy) variety, shio (salt) or miso, and even vegan veggie based broths. Customers can get anything from a succulent, meaty broth to something fiery hot to get the sinuses running.

It’s fast food, but the right kind of fast and not as you know it.
