Two minute double-choc mug cake

Chocoholics rejoice! Introducing to you a healthier double-choc cake that doesn’t sacrifice taste and takes two minutes to make.

This chocolate treat is rich and dark, dense but still fluffy, quick and simple to make, delectable and — dare I say it — healthy.

It’s high in protein, low GI and high in antioxidants, not to mention gluten-free, refined sugar-free, dairy-free and vegan. Perfect for those with a soft spot for chocolate cake but who are trying to stick to a healthier diet.

Two minute double-choc mug cake
Makes one serving

3 tbsp almond meal
2 tbsp cacao powder
½ tsp baking powder
pinch of salt
¼ cup applesauce (or 1 egg)
2 tbsp almond milk
1 tbsp pure maple syrup
1 tsp coconut oil
1 tsp vanilla extract
1 square of Lindt dark chocolate, chopped roughly
Optional: extra chocolate or cacao nibs

1. In a mug or ramekin dish, combine all the ingredients and mix well.

2. Microwave for 2 minutes (it may need a little more or less time depending on your microwave).

3. Top with extra chocolate or cacao nibs, or both!
